How to change the style of a subset of text within a paragraph or text block

By default, style updates that are made to text (e.g. font, color etc) will be applied to all of the text within a text block.  

If you want to just make style updates to a subset of the text within a block you should highlight the text and then select the paintbrush icon to split out that text and make separate style updates.
